Fish Tacos

As promised, here is Ryan Sullivan's Fish Tacos recipe. This should leave two people pretty full...
1lb catch of the day (striped bass, fluke, sea bass, mahi have all worked for me)
1 medium sized red onion
4 medium sized jalapeƱos
3-4 cloves of garlic
1 lime
Tortillas
Salt
Pepper
Olive Oil
Ground Cayenne Pepper
Steps:
1. Catch fish
2. Core the jalapenos and chop into 1/4 inch pieces. I usually cut the jalapenos in half first to make it easier to core. Feel free to leave in the seeds if you want to kick it up, but this recipe is plenty hot if you remove all the seeds.
3. Chop the whole red onion into chunks (1/2 inch)
4. Dice garlic
5. Slice your filets into 1 inch chunks.
6. Combine the jalapenos, onion, and garlic. Season with salt, pepper, and cayenne to your liking. heat about 1 tbs olive oil in a frying pan, and add ingredients at medium heat.
7. After heating veggies for 2 minutes, add the fish. Season to your liking, drizzle approx. 1 tbs olive oil over all the fish.
8. Once the fish is done, remove from the pan into another dish for serving or directly to your tortillas. I generally will get 6 tacos out of this.
Salsa/toppings:
I change up salsa and toppings all the time on this. My favorite is a corn salsa and thinly sliced cabbage, but also works great with some pico de gallo or guacamole.
